Big surprise! Started the day with a pot of coffee. I had two pounds left of the bacon slab so I decided to add the cajun spice and cook the whole piece up. The Traeger was out of the question this morning because it was raining. Set the oven for 375oF and baked for about 45 minutes. Wrapped in foil and stuck in the refrigerator for later.


A thing of beauty as far as I am concerned.


Hit the road and ate two packs of the Shop & Save Fully Cooked Bacon. This is just a cheaper alternative to Bacon Jerky. A little greasier but filling.

Had to hit the grocery store near Boston to pick up some dinner. Couldn’t find anything different so I just picked up two packs of the Oscar Mayer Fully Cooked Bacon “Thick Sliced”. The hotel had microwave so I was able to heat it up. This bacon is better warm.

Nothing real exciting or different today but any day with bacon is a good day!
